Roasting season is upon us, and it’s my absolute favorite! Rosemary Roasted Fingerling Potatoes are going to be on repeat this fall.
YOU WILL NEED:
All of this is so flexible. These are rough measurements and this recipe is easily stretched for a crowd.
2 cups fingerling potatoes, sliced long ways
1/3 c olive oil
1-2 tsp kosher salt
2 sprigs rosemary, chopped (approx 1 tbsp)
TO MAKE:
Preheat oven to 450
Wash and pat dry the potatoes
Slice them down the middle longways
Toss them in a bowl with some olive oil (or avocado, or canola if you prefer), and put them cut side down on a sheet lined with parchment paper*
Generously salt them with kosher salt
Grab some fresh rosemary, give it a quick chop with a chef’s knife and sprinkle on the potatoes
Roast for 20 minutes, then take the potatoes out and flip them; this doesn’t have to be perfect. Just toss them around a bit and then stick them back in the oven for another 20 minutes.
At this point (40 minutes total) they should be done, and maybe even check them at 30 minutes in case your oven runs hot
*the parchment paper really helps these potatoes not to stick! highly suggest using it.
These taste divine alongside a steak. Enjoy!
