Wanted to shoot you a quick recipe for the coconut lime brown rice I have been doing in my rice steamer. Gotta tell you, I used to just do water, but after adding 1 can of coconut milk, I don’t know if I will ever be able to go back!
I must say, I know its another “thing” but i really do LOVE my rice steamer. I never have to stir, it’s ready when I need it, and just makes life easier. I also know the instant pot can make rice, I just don’t have the exact instructions so look into it if that’s your preferred cooking method.
COCONUT LIME BROWN RICE (in the rice steamer)
YOU WILL NEED:
- 2 cups of rinsed brown basmati rice
- 1 tsp ground ginger
- 1 can full-fat coconut milK
- 2 tbs lime juice
- 1 tsp salt
- 2.5c water
*If your coconut milk seems extra chunky, try blending it in your blender, though you certainly don’t have to. The chunks shouldn’t hurt the rice and should melt as the steamer heats up.
TO MAKE:
All into my rice steamer, stirred, then set for whatever time you plan to eat dinner. It’s like rice, but a bit thicker, with the slightest hint of coconut. Dreamy!! Pairs amazing with the honey-dijon salmon recipe I posted yesterday, which I repeated to make the meal above.

- Step 1 Put all ingredients into rice steamer, stir, then set for whatever time you plan to eat dinner
