LarA-BitEs! These happened completely on accident from a recipe gone wrong and they are delicious. Basically, I was trying to make “rawnola” (raw granola) and left the food processor on too long.
I actually am not a larabar fan, but these are a little less “datey” and have the addition of oats so they feel way more substantial to me. Once I realized they tasted like cookie dough, I threw in some dark chocolate chips because why not?!
The great news is this recipe is extremely flexible and can have a million substitutions. The first time I made them I added pecans and walnuts. This time i forgot to…so let’s call this the most basic #nutfree version…which makes them perfect for kiddos with allergies or nut free schools!
NOTES:
*I know they last a solid month at least because i ate them…but good luck making them last that long!
**If yours seems to wet add more oats, too dry add a bit more dates or milk.
***If have not tried doing these in the blender…there are some things a good processor seems to be better for as it blends on an even plane as opposed to pushing things to a blade at the bottom. But by all means, if you’ve got a blender and wanna try have at it!
2 cups old-fashioned oats
8 large medjool dates (pitted)
1/2 cup shredded coconut
1/2 teaspoon cinnamon
1/2 tsp sea salt
1/2 c chocolate chips
1 tbs chia seeds
1/2 tsp vanilla
6 tbs almond milk (use a milk alternative if want 100% nut free!)
Mom to four wonderful little people. While they sleep, I cook.
