Lara-Bites! These happened completely on accident from a recipe gone wrong and they are delicious. Basically, I was trying to make “rawnola” (raw granola) and left the food processor on too long.
I actually am not a Larabar fan, but these are a little less “datey” and have the addition of oats so they feel way more substantial to me. Once I realized they tasted like cookie dough, I threw in some dark chocolate chips because why not?!
The great news is this recipe is extremely flexible and can have a million substitutions. The first time I made them I added pecans and walnuts. This time I forgot to… so let’s call this the most basic #nutfree version… which makes them perfect for kiddos with allergies or nut-free schools!
These delicious snack bites are Larabar-esque, but I find them to be more filling with the addition of old-fashioned oats. This is a basic nut-free recipe (that tastes like cookie dough!) – feel free to add nuts, or any other ingredients you’d like.
2 cups old-fashioned oats
8 large medjool dates (pitted)
1/2 cup shredded coconut
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 cup chocolate chips
1 tablespoon chia seeds
1/2 teaspoon vanilla
6 tablespoons almond milk (use an alternative milk if want it to be 100% nut free!)
