NTK Slaw Recipe
The bagged salad from Costco contains: Broccoli, cabbage, brussels sprouts, kale, chicory, dried cranberries, roasted pumpkin seeds, and a poppyseed dressing.
Here’s the thing though: I don’t enjoy sweet salad dressings. I also don’t enjoy craisins in my salad. The dressing is a bit too “gloopy” for me (much like the Asian bagged salad, I really don’t enjoy a gloopy dressing.) So, I make my own!
*And don’t you worry! I don’t dare waste the little bag with the pumpkin seeds and craisins. I save them to use when I make my Homemade Granola.
3-INGREDIENT LEMON GARLIC DRESSING
You will need:
- 1/3 cup extra-virgin olive oil (EVOO)
- Juice of 1 lemon (approx. 2-3 tbs lemon juice)
- 1 garlic clove (I buy the frozen cubes from TJ’s; you could also use 1 tsp minced garlic)
To make:
- Fill a mason jar with the 1/3 c EVOO
- Drop the garlic cube into the EVOO
- Juice your lemon (I love to use this juicer and stick it right on the same wide mouth mason jar that I poured the EVOO into)
- Put a cap on the jar and shake the heck out of it!
- Grab a large bowl and pour the salad in, then pour the dressing over the top.
- *This is important! Mix the dressing into the salad WELL. Personally, I use my hands and really massage the dressing into the greens. Kale, broccoli, brussels…all very rough. They need a good dressing to soften them!
- From here, the world is your oyster. Top with anything you like. I enjoyed it today with goat cheese, pumpkin seeds, strawberries, and chicken. I also love adding a lot of fresh parm sprinkled in with my micrograter.
The entire salad is enough for a dinner party of 6-10 to all get some greens.
This keeps in the fridge for a good 3 days.
