The bagged salad from Costco contains: Broccoli, cabbage, brussels sprouts, kale, chicory, dried cranberries, roasted pumpkin seeds, and a poppyseed dressing.
Here’s the thing though: I don’t enjoy sweet salad dressings. I also don’t enjoy craisins in my salad. The dressing is a bit too “gloopy” for me (much like the Asian bagged salad, I really don’t enjoy a gloopy dressing.) So, I make my own!
*And don’t you worry! I don’t dare waste the little bag with the pumpkin seeds and craisins. I save them to use when I make my Homemade Granola.
The entire salad is enough for a dinner party of 6-10 to all get some greens.
This keeps in the fridge for a good 3 days.
1/3 cup extra-virgin olive oil (EVOO)
Juice of 1 lemon (approx. 2-3 tbs lemon juice)
1 garlic clove
