Last night’s supper, photographed in the snow, because SNOW (we are still riding the high here in Charleston)!
If you are new to following me, we eat a lot of pasta. At least once a week. Why? The entire family loves it (praise the Lord!), it’s filling, it’s inexpensive, and it’s easy!
This version included an all-star ingredient: bacon
I sautéed onion and mushrooms in some butter, then took half to save for my breakfast casserole. The other half I kept in the pan. I then cooked a bag of whole grain rotini, throwing in a large handful of peas when it had about 1 minute left. Once the pasta/peas were cooked and strained, I added them + the entire jar of @traderjoes vodka sauce + 1 cup parm cheese + 3 strips of bacon, diced to the pan. STIR, STIR, STIR and allow this to all simmer.
At the last minute, I threw in the last of some baby kale we had. I then topped it with a little extra parm and called it done ✅ so filling and comforting and delicious.
*Fun tip: After you pour out your jar of sauce, throw a little splash of half and half, milk, or heavy cream in the jar. Put the lid on and shake it up! then pour it into the pasta. You get every last bit of sauce AND a nice little touch of cream.
We’ve got some leftover and I think it’s a race to see who will devour it first: Nate or Scout. My money is on Scout!
