
I am a huge fan of batch-made breakfasts that help mornings run smoothly in our household. This easy recipe has been a go-to now for four years and I don’t see that ending anytime soon.
Making pancakes on a griddle or stove top can be messy, cumbersome, and SLOW. On busy week day mornings, I just don’t have that kind of time. And on the weekends, we want to wake up slowly and enjoy breakfast together, so I don’t want to spend the entire meal flipping pancakes and washing dishes. The solution to all of these breakfast problems: Sheet Pan Pancakes, aka Sheet PANcakes.
These easy sheet pan pancakes are the easiest way to make pancakes for a crowd without standing over the stove flipping batch after batch. They’re fluffy, freezer-friendly, perfect for meal prep, and one of my favorite breakfasts for busy school mornings. Whether you’re feeding toddlers, hosting brunch, or stocking your freezer, this recipe makes breakfast incredibly simple.
I use the Kodiak Cakes mix (great price at Costco!) for an extra dash of protein. Many grocery stores have their own private label brand of high protein pancake mix, and I’ve heard great things about the Aldi Millville protein pancake & waffle mix as well.
Sheet PANcakes cook faster and yields more than making a batch of pancakes. Also they are somehow fluffier!? Maybe from my not flipping them so much. Add your favorite mix-ins for an extra yummy touch. For our family, we’re a half blueberry, half mini chocolate chip household. I drop the blueberries & chocolate chips right on top of the batter before it goes in the oven, and everyone gets exactly what they want in their own square.
These also happen to be one of the best freezer-breakfast recipes I’ve found. Cut into squares, freeze with parchment between layers, and you’ve got a grab-and-go breakfast for weeks. Thirty seconds in the microwave and they’re ready to eat!

This is one of the best freezer friendly breakfast recipes because they reheat beautifully! We just stick a square in the microwave for 30 seconds (longer if frozen). Add syrup and voila! Breakfast is served!
Yes! I use Kodiak, but Bisquick, Krusteaz, or any store brand pancake mix is fine. For extra protein, use a high protein pancake mix.
Yes! Just make pancakes as instructed on the box according to package instructions and skip the eggs.
Strawberries, blackberries, peanut butter chips, cinnamon, apples, sprinkles, etc are all great ideas.
Yes! These freeze very well. Freeze for up to 6 months, cut into squares and separated by sheets of parchment paper so they don’t stick together.

These would also make a great dish to take to a postpartum mom or a family in need. I would pre-cut them into squares and add a small container of maple syrup on the side. 3 cups protein pancake mix (or pancake mix of your choice)
2 cups milk of choice
2 eggs (could add a 3rd egg if you want)
1 tsp vanilla
Optional add-ins: 1/2 frozen blueberries and 1/2 mini chocolate chips
I shared this on Instagram and got some great comments with tips from others who have tried this method as well. @mrs_gluntz shared: “Also great to pop in the toaster for on the go. I also add the syrup TO THE BATTER for no-mess handling!” I admit I want to try this but I wonder if my kids would still need syrup on top.

Came here to print out to tape to my Rubbermaid Brilliance Pantry container with the pancake mix in it. I feel like both the printing of recipes, the containers and the recipe are all influenced by you. I add a drizzle of pure maple syrup to the batter and cut with a pizza cutter into big rectangles, and the kids eat them in the car. No sticky in my car! They love the blueberry Kodiak cake flavor. But seriously, I don’t cut pizza with my pizza cutter, I cut up pancakes and that type of stuff with it. Easy to cut into bite sized pieces with it too for littles. Just sharing that tip! Oh man, was this good!! I didn’t have Kodiak on hand, but I used my usual buttermilk pancake recipe and adjusted it so that I had three cups of flour (I use half almond and half whole wheat for a little extra protein), three eggs, and 2.5 cups of buttermilk (and all the related ingredients, like baking powder, soda, salt, sugar, and oil). While I was stirring the batter, I stuck the sheet pan in the hot oven with a couple tablespoons of butter, then sloshed the melted butter all over the pan before pouring in my batter. SO MUCH BETTER AND SO MUCH EASIER than traditional pancakes. My kids have requested that I only always make these now, and I don’t mind one bit. Thanks, Kate!!!

Must made these and I will never make pancakes the old fashioned way again. So quick and delicious. I make my pancakes in bulk so this is truly a game changer for me. I used a pizza cutter and it worked perfectly.

I make these almost weekly now! And I can’t believe it took me this long to figure out, but I now make a batch of Kodiak cake muffins according to the box and while they are baking, I get the sheet pancakes ready. I don’t wash the dishes in between because they use practically the same ingredients. I freeze most of it and have breakfast for at least a week for the kids. And I only do dishes, use the oven, and clean up once.
Batching these together is genius!!
I tried this recipe today, but I had the plant-based Kodiak mix since the store was out of regular. It started to burn on the outside while staying raw and doughy on the inside. Might try again another time, but it was so disappointing (especially for my kid who helped me make them). Wasted a whole bunch of good chocolate chips.
Oh no I am so sorry, we have never had this issue! Must be the plant based version difference. Maybe you could try covering with foil when you notice it is browning too early and cook for 5-10 minutes more

I turned my mom on to this great recipe, we both use the Kodiak mix. Then, she turned me on to a variation that I absolutely love. We add the zest of one orange into the batter. We juice that same orange into a small saucepan and stew 1/2 cup of craisins over low heat. Once the craisins soak up the juice, pour them into the batter. I also like to add 1-2 tablespoons maple syrup in the batter. The orange cranberry flavor is soooo good in these pancake bars.

I should have mentioned that my orange and craisin add-in amounts are for a half batch of the sheet pancakes. It’s just my husband and me so I only make half a batch at a time.

I totally thought of this after the fact but I used a “just add water” mix because it’s all I had on hand and so I didn’t need to add eggs 🤦🏼♀️ so we will see how it turns out. I also whisked all the ingredients together and not sure if I should have so we will also see how that turns out 🙂 excited about this though! And will tweak for next time if needed !

Made these today without egg (due one kid’s to allergy) and everyone loved them! Our kids don’t always love pancakes, so when I called this “breakfast cake” they tried it as a snack and are so excited for the week! Have always seen your posts suggesting this recipe and glad I finally tried it!
