I wish I had a better picture but obviously you can see how much we LOVE this! It’s my mom’s recipe and makes the perfect side to virtually any meal.
YOU WILL NEED:
- 2 bags/boxes frozen spinach
- 3 eggs
- Salt & pepper
- Garlic salt
- A few tbs. olive oil
- Grated cheese (cheddar preferably) to taste; (I used 1 cup, and then another ¼ cup on top to sprinkle)
- Grated parm cheese (to taste); (I used ½ cup)
- 2 cups cottage cheese
PREP WORK:
- Let the spinach thaw
- Preheat oven to 350
TO MAKE:
- Squeeze the spinach thoroughly (i unwrap it from the box and put in a paper towel and squeeze like hell!)
- Mix all ingredients on a bowl
- Put in a casserole dish (around a size 8×8; I use a round dish)
- Sprinkle more cheddar and parm cheese on top
- Bake uncovered 350 degrees for 30-45 minutes
