Momma’s Spinach Casserole

I wish I had a better picture but obviously you can see how much we LOVE this! It’s my mom’s recipe and makes the perfect side to virtually any meal.

YOU WILL NEED:

  • 2 bags/boxes frozen spinach
  • 3 eggs
  • Salt & pepper
  • Garlic salt
  • A few tbs. olive oil
  • Grated cheese (cheddar preferably) to taste; (I used 1 cup, and then another ¼ cup on top to sprinkle)
  • Grated parm cheese (to taste); (I used ½ cup)
  • 2 cups cottage cheese

PREP WORK:

  1. Let the spinach thaw
  2. Preheat oven to 350

 TO MAKE:

  1. Squeeze the spinach thoroughly (i unwrap it from the box and put in a paper towel and squeeze like hell!)
  2. Mix all ingredients on a bowl
  3. Put in a casserole dish (around a size 8×8; I use a round dish)
  4. Sprinkle more cheddar and parm cheese on top
  5. Bake uncovered 350 degrees for 30-45 minutes
