Hi everyone! Wanted to get this to you in case you are meal planning for the week. I get this question so often: How do you do your chicken in the crock pot, and why?
First, WHY: I like the texture of shredded chicken way more than a chicken breast. I think the margin of error is way more forgiving as well. The chicken tends to stay juicy and be very evenly cooked. Also, it stretches wayyyy further if you shred it. Really good if you are #ballinonabudget or have a husband that requires meat in order to count something as “a meal”.
Now, HOW: It is so easy. I throw the thawed chicken breasts in the crock pot, generously season with my pink sea salt grinder and pepper grinder (both from Costco) then do a small drizzle of olive oil. I am talking 1-2 tbs max. You don’t want to do too much or your chicken will be oily. I would err on the side of 1 tbs for 4 chicken breasts. I do NOT add any water. The crock pot will create some condensation and the chicken is usually a little wet when you put it in.
Now, this is important: KNOW THY CROCK POT. This little red crock pot of mine is my favorite. It is smaller than my other one (it’s 4 qts as opposed to 6) and I have learned the optimal cooking time. For my crock, it is 5-6 hours on low. If I try and take the chicken out at 4 hours, it is super hard to shred, almost rubbery. In that last hour it gets super tender to where my fork merely touching it breaks it apart. You might have to do some trial and error for your crock pot.
You can shred with 2 forks. I do this for convenience and because it takes approx 30 seconds. Some use a hand mixer or even get out their stand mixer. I prefer 2 forks. It’s just too easy not to and way easier clean up.
We also prefer a larger pieced shred. Some likely prefer the chicken to be shredded super small, in which case maybe you would want a hand mixer.
TO CLOSE: 1 pack of chicken (thawed!) in the crock pot, salt and pepper, splash of olive oil, LOW 4-6 hours.

Basic Chicken in the Crockpot
- 1 pack of chicken breasts (thawed!)
- 1-2 TB Olive Oil
- Step 1 Place chicken breasts in crockpot
- Step 2 Generously season with salt and pepper
- Step 3 Drizzle chicken with olive oil
- Step 4 Cook on LOW 4-6 hours (if chicken is still rubbery, cook a little longer)
