Made my #NTKcrockpotwonders Mango Soyaki Chicken, except this time also added some roughly chopped sweet peppers. Gosh, I LOVE A CROCKPOT MEAL!!! It was a hit (even with John Robert!) yet again. In case you missed it the first time around, here is the recipe for the chicken. You can then take this and sauté it with any veggies you have on hand, and serve over rice (or cauli rice, or quinoa).
YOU WILL NEED:
- 3 chicken breasts
- 1/2 c teriyaki sauce of choice (I used @traderjoeslist “soyaki”)
- 1/2 c diced white onion
- 3/4 c diced mango (I do think fresh mango is better and less mushy but when you don’t have it frozen works well and since it’s fast and already chopped it’s usually what I end up doing)
- Optional: 3-5 diced sweet peppers
- Optional: 1 tsp rep pepper flakes
TO MAKE:
- Place the onion and sweet peppers in the bottom of your crockpot, then add the chicken
- Add the Soyaki sauce, and lastly throw the mango on top.
- Cook on LOW for 4-5 hours, come back and shred the chicken. THAT’S IT!
- Sprinkle with red pepper flakes if you like a little heat
You can serve this with brown rice and steamed broccoli, or add lots of veggies and do a stir fry!
