Happy Friday, everyone! Here’s the super easy salad I paired with that tortellini I posted yesterday. It’s a toss up as to which one is easier.
Whenever I go to a restaurant, if this is on the menu, I order it. There’s just something about the simplicity of peppery arugula, sharp parmesan, juicy summertime tomatoes, and a thick balsamic.
I. LOVE. IT. It’s the perfect start to any meal and can pair well with just about anything.
MY FAVORITE ARUGULA SALAD
It’s pretty self explanatory….bed of fresh arugula + big chunks of shaved parm + halved cherry tomatoes + a drizzle of reduced balsamic (or balsamic glaze) and good olive oil + fresh cracked pepper. That’s it!
