Here’s the thing about chia jam: yes, it has the healthy benefits of chia seeds (omega-3s, fiber, protein) but more importantly, the chia seeds absorb the strawberry juice and turn it from liquid into jam! It acts as pectin, if you will. Thus far I have made 2 batches of this jam and I might go pick strawberries (again! ha) and make more because you can freeze it and I want to give it to everyone I know.
