This is one of the first smoothies I have made without any fruit, and I was so pleasantly surprised! I looked at some recipes online and bought some fresh spearmint at the Farmer’s Market. This smoothie is a winner in my book. The protein powder helps to make it nice and filling. I had it as a little afternoon pick-me-up between lunch and dinner.
BLEND, SIP, ENJOY!
*(Totally unnecessary but it does enhance the flavor and i hate to see a good lime skin go to waste!)
1 scoop vanilla protein powder (I prefer Aloha)
3-5 Fresh mint or spearmint leaves (depends on preference)
Juice from ½ a lime (or approx. 1 tbs)
Lime zest*
1 handful spinach or kale
1 tbs chia seeds
2 tbs coconut oil
1 c water (or coconut water if you have it)
Ice (I like my smoothies super cold so I used a lot)
