Creamy Blueberry Cauliflower Smoothie (aka The Purple Unicorn)

Created this beauty and it was soooo good I had to share. There are very few ingredients! The color is unreal and the kefir gave it a lovely little creamy tang

YOU WILL NEED:

  • 1 cup frozen blueberries
  • 1/2 c kefir (or plain yogurt)
  • 1 c frozen riced cauliflower (raw)
  • 1/4 avocado
  • 1/4 banana
  • milk of choice to desired consistency (we use almond milk)

TO MAKE:

Blend all ingredients until smooth, adding more milk or water to desired consistency. 

NOTES:

I love the taste banana adds, but you could easily leave it out. I added the avocado for some healthy fats and creaminess. Riced cauliflower is so easily hidden in a smoothie and if you don’t have kefir, use plain greek yogurt
