Coconut Curry Chickpeas

These make the BEST snack/salad topper/veggie bowl addition!

YOU WILL NEED:

  • 2 cans of @traderjoeslist organic chickpeas (rinsed well and patted dry)
  • approx 1 tbs melted coconut oil
  • 1/2 tsp paprika
  • 1/2 tsp curry powder
  • 1/4 tsp sea salt (more if you love salt!)
  • cracked pepper to taste

TO MAKE:

  1. toss the chickpeas in the melted coconut oil + curry powder + smoked paprika+ sea salt + cracked pepper
  2. roast at 400° for approx. 25 minutes, shaking every 8-10 minutes.
