A variation on my classic “slaw.” Whipped this up this morning. Best part? The dressing can stay on it for days! The mix is so crunchy it really won’t get soggy. I made it and then went ahead and divided a lot of it into little tupperwares (truth be told, I use old Greek yogurt containers) for Nate’s lunches.
YOU WILL NEED:
- @traderjoeslist cruciferous crunch mix (or a similar bagged mix involving kale, cabbage, or the like)
- toasted pecans
- shredded carrots
- homemade vinaigrette (this time it was balsamic, rice vinegar, EVOO, and dijon)
TO MAKE: all in the tupperware and then shake shake shake!!! ??????
We have had a busy morning! So glad this is waiting for me in the fridge. I am thinking I’ll put it in a wrap with shredded chicken and perhaps avocado.
