As promised, here is the recipe for my @traderjoes HARVEST GRAIN *NTK EDITION* I’m thinking next time I might add teeny shreds of carrots. Maybe some currants. There are so many ways to make this mix amazing!
1. Cook grains according to package directions…except use veggie stock instead of water and splash of coconut oil instead of butter. I wrote those details out here.
2. When done cooking, allow to cool
3. In a mixing bowl, stir the cooked grains with 1/3 c toasted pine nuts + 1/4 c shredded parm cheese + 1/4 c caramelized diced red or white onion (I caramelized mine on the stovetop by cooking it super slow in @kerrygoldusa butter)
This is seriously so good. The bite of the parm…the salty, nutty pine nuts…the caramelized onion.

1/3 c toasted pine nuts
1/4 c shredded parm cheese

I have to tell you how much I love this recipe!! I make it almost weekly for my husband and I for dinner. I roast portabella mushrooms, broccolini, and brussel sprouts (on the same pan) in avocado oil with pink sea salt, pepper, and red pepper flakes. Add the veggies to the grain bowl, top with goat cheese… tastes amazing!! Thank you for this easy, quick recipe that we love as vegetarians!

Been dying to try this ever since I was preggo, but couldn’t because of the gestational diabetes diet. Currently about to make now. Yay! Finally. Does this freeze well after cooking?
So glad you got to make it!! So I have never frozen it before but I don’t know why you couldn’t try it. I don’t think it could hurt it! Ours never lasts long enough to freeze, haha!
This was sooooooooo good! A repeat recipe for sure. I served this with beef kofta and Greek yogurt.
