Hello friends! In case you missed it, I have finally jumped on the IP bandwagon. It was about time, and to be honest, I was itching for something new in the kitchen. So far I have only made 3 recipes, but it has been a fun experiment!
One of my meal plan mantras found in the new NTK Guide to Meal Planning and Grocery Shopping is:
It’s just food. One meal shouldn’t have the power to make or break anyone’s day.
I hope this allows you to really take the pressure (pun intended) off of yourself! We are not on Top Chef. Your judges could very well be tiny humans who applaud boxed macaroni and a husband who silently fist pumps when you are “too tired to cook” and he gets to order pizza and wings. Let them eat some bad meals! It builds character.
I am taking this mantra very seriously when it comes to learning the instant pot! There is a learning curve. There are also likely a lot of bad recipes out there (ha!). But we are going to have fun with it, make some mistakes, and learn a new kitchen tool in the process.

@pinchofyum has a TON on her blog and does a lot of prep work ahead to go into the freezer.
@damndelicious has always been a favorite blog of mine and the first of her IP dishes I tried was amazing.
@sixsistersstuff is new to me but it all looks amazing! They have an extensive blog as well.
I hope some of these inspire you! And thank you to everyone who submitted recipes. I plan to take one from this list each week to get some new recipes in the rotation and bring a little variety this summer. Can’t wait!

I try to screenshot EVERYTHING you share on Instagram but this is pure gold. Can personally vouch for the LLP balsamic chicken, by the way!
