TWO CHEESE QUESADILLA TIPS
TIP 1: Microwave it for about 15-30 seconds so the cheese gets a little melty and the sides stick together. That way, you don’t have tons of little cheese shreds falling all over your stove when you try and go for the quesa-flip. For gosh sake Napoleon! If only you had known this tip. **This also really helps if you are adding other ingredients to your quesadillas that would otherwise fall out.
TIP 2: fry in equal parts coconut oil and butter (or just coconut oil if you prefer). They pop and sizzle and turn the most gorgeous golden brown. Crispy on the outside, ooey gooey cheese on the inside. Then, I simply let them cool a bit and cut them into little triangles with our pizza cutter.
