Balsamic Chicken Pasta

Balsamic Chicken Pasta

I made the main dish for supper tonight and this “Bruschetta Pasta” was a big hit!!

You will need:

  • 1/3 c olive oil
  • 1/3 c balsamic vinegar
  • 1 tbs italian seasoning
  • 2 cloves garlic
  • 2 c cooked, shredded chicken
  • 1.5 c diced cherry tomatoes
  • S and P to taste
  • 2 handfuls fresh basil leaves, chopped or torn
  • 1 c parmesan cheese
  • optional: 2 squirts trader joe’s balsamic glaze

To make:

  1. cook whole-wheat penne according to box directions (**note: this is a huge pan and we did a double batch; directions below are for a single batch, aka 1 box of pasta**), drain, and set aside.
  2. In a very large frying pan, heat olive oil, balsamic vinegar, Italian seasoning, 1-2 cloves garlic (I used 2 cubes of the @traderjoeslist frozen garlic), shredded chicken, and diced cherry tomatoes.
  3. Bring this to a boil, then add the cooked pasta and stir well. Reduce heat and allow to simmer for about 5 minutes.
  4. Top with fresh basil, parm, and a squirt of @traderjoeslist balsamic glaze. And VIOLA!

{You could absolutely make this vegetarian by leaving out the chicken and it would be delicious}
