A quick note on eating “healthy” {especially if dinner is a struggle}
Hi friends! I spoke about this briefly in stories yesterday and thought I would put it here too: a while back I decided that dinner was going to be our easiest meal for this season. Lots of one pan dishes. Lots of single pasta meals with no sides. Cheese quesadillas galore.
Instead, I put the “healthier” (I use that word in quotes bc I don’t think there’s a clear definition or one way to be healthy) meals where I had more time and energy. I swapped my morning toast for a green smoothie, and tend to take more time at lunch bc it’s the time of day I usually get a little moment to myself.
Dinner was loud and chaotic and in this season I was honestly tired of working hard over meals that weren’t appreciated by the little people. So instead, I make myself a killer lunch and sing my own praises ????
Just a little reminder that dinner doesn’t have to be your most stellar meal. Or even your most original! Maybe you have a ton of repeats. Maybe lunch is actually an easier time to introduce a new food to your child via his lunchbox. This might take some trial and error, but I also think it can lead to needed freedom and flexibility for YOUR needs and YOUR family. Dinner is one of 3 meals a day. It doesn’t have to have any added pressure or expectations unless you want it to ❤️
