I have been dreaming about this parfait ever since I tried it yesterday. I am not kidding when I say the strawberry chia jam takes it over the top. It’s unreal! This is truly the easiest jam you will ever make and I don’t know if I’ll ever make normal jam again – gasp!
Here’s the thing about chia jam: yes, it has the healthy benefits of chia seeds (omega-3s, fiber, protein), but more importantly, the chia seeds absorb the strawberry juice and turn it from liquid into jam! It acts as pectin, if you will. Thus far I have made 2 batches of this jam and I might go pick strawberries (again! ha) and make more because you can freeze it and I want to give it to everyone I know.
I layered my homemade granola + Siggi’s plain full-fat yogurt + this super easy strawberry jam.
