For our very first married Valentines Day, I told Nate I wanted to take the reigns and planned a wonderful evening of a homemade meal followed by a special Valentines Star show the Moorehead Planetarium was putting on. (If you know Nate, you know this is right up his alley ????????????). We were living cheap and risotto felt fancy while still #ballinonabudget.
On February 12th, a huge snowstorm hit Durham hours before they thought it would, leaving many stranded on highways and at the bottom of hills. We spent the next 3 days holed up at the bottom of our own little hill. Sadly, the star show was cancelled due to the weather, but that didn’t stop us from having a cozy valentines meal. Just Nate, Annie the Puggle, and me. This was all before kids. Before NTK. Before our move back to my hometown of Charleston.
Even years later, every time I make risotto I am reminded of that season of ours lives and the fondest of memories flood in.
If you are looking for a delicious and easy meal to make for your special someone, look no further. This is filling and with the butter, white wine, and fresh parm, it tastes decadent. Serve it with a side of roasted veggies and a salad with a spicy balsamic. Or allow it to be the perfect compliment to a nice steak. Either way, it’s a true winner!
