Years ago I was flipping through a Real Simple Magazine and saw a recipe for almond butter blondies. I didn’t think much of it and tossed the magazine, but the seed was planted. For weeks afterwards all I could think about was almond butter blondies! I knew I wanted to create a recipe that was healthy yet still satisfied my sweet tooth and I think I nailed it!
Creating this recipe was a labor of love! (Made it four times before I knew it was ready to share with you all.) I wanted a healthier blondie with some added protein and nut butter taste that wasn’t too dry or boring. I love the added moisture from the yogurt and the variation in the chocolate from using both chocolate chips and a cut up chocolate bar. Want to sub peanut butter for the almond butter? Go for it! A different kind of yogurt? You can do that too! Same goes for your choice of chocolate. And a major bonus: you only need ONE BOWL and NO MIXER!
Note: These are less sweet than a classic blondie and that was on purpose. I wanted something to enjoy mid-afternoon without adding a ton of sugar. Hope you enjoy!
Store in an airtight container. I prefer to do so in the fridge and pop one in the microwave for 30 seconds for an ooey-gooey treat.

servings3/4 cup almond butter
1/3 cup avocado oil
1/2 cup brown sugar
1/4 cup milk of choice
1/3 cup greek yogurt
1 egg
1 tbsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt (do 1 tsp is almond butter was unsalted)
1 cup whole wheat flour
1/2 cup chocolate chips
1 (3 oz.) chocolate bar cut into chunks
Sprinkle of flaky sea salt (I prefer Maldon salt)

Easy to make but honestly tasted a little healthy for me (lol). If I’m making, I’m ok with it being rich, so maybe I’ll try for regular flour next time
