I’ve gotten into a rhythm of eating a big morning snack (a few hours after breakfast) in order to tide me over to a later lunch. This way, I’m not hangry during whatever morning adventure we get into and I don’t make “lunch” out of the kids discarded sandwich crusts and half eaten bananas. I then make my lunch once I have gotten them down for rest/quiet time.

Taking these three little people to do things requires some serious fuel! Favorite snack right now: overnight steel cut crock pot oats + fresh peaches + homemade cashew butter (I’ll post how I made it next week!). Or I nix the peach and do chocolate chips instead. They melt and it’s divine!

*my recipe for oats uses a double boiler method and creates the most perfect creamy and filling hot oats. If you wanted you could do a cold method for overnight oats where you store them in the fridge and they soften in milk/yogurt. There a ton of them online and I like the one by cookieandkate.
