
This was so delicious and easy! Really, all that needs “cooking” is warming up the pita and the meatballs. The marinated chickpeas are totally optional but add some solid flavor from the marinade + fiber. 🙌🏼 Save this for a low-effort, high-payoff summer meal. If you would rather watch in video form, here’s how I put it together last week.

MARINATED CHICKPEAS:
1 — Drain and rinse a can of chickpeas and put them in a bowl.
2 — Add approximately 1 tbsp olive oil, 1 tbsp red wine vinegar (or ½ tbsp lemon juice), and a squirt of Dijon mustard. Stir.
3 — Salt and pepper to taste. I had some Mediterranean seasoning, so I added that as well.
4 — You could really jazz this up with peppers, onion, parsley, feta—you name it. I kept it very simple.
5 — Stir and allow to sit for 30 minutes, but the longer the better.
The beauty here is that everyone can make what they like. My big kids did bread + hummus + meatballs. Allie and her friend did cut-up meatballs + bread + hummus on the side + fruit. Nate and I did the full monty. We did have some leftovers, but not as much as I thought we would because my kids pounded the meatballs. I still have all the spreads and sides, though, so we’ll likely repeat this meal next week. 🤌🏼

Feta
Pickled red onion
1 can of chickpeas
1 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp dijon mustard
Salt and pepper to taste plus mediterranean seasoning if you have it
