It’s so vibrant and fresh and has only 3 INGREDIENTS! Carrot juice (I use store-bought), frozen mango, and a tiny chunk of ginger (like a 1/4-inch piece).
**I buy ginger fresh, peel it, chop it into bits and store it in the freezer to pop in smoothies. So easy and a little goes a long way!
I was a skeptic, but this was a surprisingly good vitamin C boost (because ain’t nobody got time to be sick!). It’s also good for easing nausea, for all the preggos out there!
That’s it! And it’s kid-approved too ✅ This was so easy and we will definitely be making this over the summer. I want to try making a larger batch and freezing it to see how the consistency holds up. And you better believe this is going in a popsicle mold for bath time!!

Yum! I wonder if you could also roast carrots (to soften them) and use those in place of the carrot juice (or in addition, since I suppose you would need a source of liquid)? Sounds tasty!
That could work! If your blender is powerful enough, you can also chop carrots (I would recommend smaller pieces to help the blender) and add them raw. But yes you would need another liquid!
