Need a January pick me up? This combo of carrot, ginger, and mango is like a healthy “sorbet”…smooth enough for a straw, thick enough for a spoon!
It’s so vibrant and fresh and has only 3 INGREDIENTS! Carrot juice (I get store bought), frozen mango, and a tiny chunk of ginger (like 1/4 inch piece).
**I buy ginger fresh, peel it, chop it into bits and store it in the freezer to pop in smoothies. So easy and a little goes a long way!
I was a skeptic but this was a surprisingly good vitamin C boost (because ain’t nobody got time to be sick!)…also good for nausea for all the preggos out there!
1. Fill blender with approx 1 c frozen mango chunks
2. Pour in 1/2 c carrot juice
3. Add 1 piece of ginger
4. Blend in your Vitamix (mine is linked here), using the tamp stick to smoosh everything down if you want it really think like a sorbet, or adding more carrot juice if you want it thinner
That’s it! And kid approved too ✅ This was so easy and we will definitely be making this over the summer. I want to try making a larger batch and freezing it and seeing how the consistency is. And you better believe this is going in a popsicle mold for bath time!!

Yum! I wonder if you could also roast carrots (to soften them) and use those in place of the carrot juice (or in addition, since I suppose you would need a source of liquid)? Sounds tasty!
That could work! If your blender is powerful enough, you can also chop carrots (I would recommend smaller pieces to help the blender) and add them raw. But yes you would need another liquid!
